The culinary twist at Vakkaru Maldives
Vakkaru Maldives, a secluded tropical island resort in the UNESCO Biosphere Reserve of Baa Atoll, has announced the appointment of chef Bruno Cerdan as the resort’s new director of culinary. With over 30 years’ experience in the hospitality and catering industry, Cerdan will bring his expertise and passion for luxury and destination dining to the resort this February.
He will oversee all five of Vakkaru Maldives’ indulgent and diverse selection of restaurants; from global cuisine with a Maldivian twist at the bright and airy Amaany, open-air beach grill at Vakku, South East Asian influences at Onu, Japanese delicacies at Lagoon Bar and vibrant Italian flavours at Isoletta.
With Vakkaru’s on-site Organic PEG Farm, complete with its own fresh fruit, vegetables and herbs, he will continue Vakkaru’s farm-to-table dining for all guests and make use of local, organic ingredients.
