Eurostar is introducing a revamped gastronomic offering for its Eurostar Premier customers1 . For the first time in the world, a team of three visionary chefs, Jeremy Chan, Jessica Préalpato and Honey Spencer, will serve their daring creations to passengers on a high-speed train from 4 November.
Wherever they go, Eurostar Premier customers will experience a culinary journey that is both bold and sophisticated. Recognised for their expertise in reinventing cuisine, these chefs challenge traditional culinary norms with every dish they offer. Menus are designed with sustainability in mind, using primarily fresh, seasonal ingredients sourced from the countries in which Eurostar operates.
This new culinary offering is part of the launch of Eurostar’s new travel classes: Eurostar Standard, Eurostar Plus and Eurostar Premier.
This refresh of the offering marks a significant milestone for the new Eurostar, which was launched a year ago. The renewed offering offers customers a unique, modern and sustainable European experience.

A new generation of chefs challenging travel norms
Eurostar is taking rail travel to the next level by offering its customers a refined gastronomic experience. By teaming up with three chefs who share the same vision, Eurostar is offering Premier travellers a culinary journey across Europe that is more modern, bold and environmentally friendly.
- The starters and main courses are designed by Jeremy Chan , a British chef who puts local ingredients in the spotlight by combining them with different spices and flavours from around the world. His London restaurant Ikoyi, where he is head chef, has 2 Michelin stars and has been named one of the 50 best restaurants in the world in the World’s 50 Best ranking.
- The desserts were created by Jessica Préalpato , a French pastry chef who emphasizes natural flavors such as ancient grains, unrefined sugars and plants. In 2019, she was named the world’s best pastry chef in the World’s 50 Best ranking and is the first woman to be named pastry chef of the year by Gault and Millau, making her one of the new faces of pastry.
- The wines and champagne have been carefully selected by British sommelier Honey Spencer. This advocate of organic and sustainable wines has been a sommelier in renowned establishments and is one of the 50 most influential sommeliers in London according to Drink’s Business.
The culinary signatures of Jérémy Chan and Jessica Préalpato, which emphasise bold combinations, complement each other and are complemented by the wine list, curated by Honey Spencer. The menu, with generous portions, now consists of four courses: starter, main course, cheese and dessert. Each menu has been created by the chefs during working meetings and multiple tasting sessions with the teams, to create a true culinary signature that reflects the Eurostar identity and is perfectly presented on the plate. The promise: a premium offering that challenges the norms of European travel.
Honey Spencer: “I had the pleasure of creating the wine and drinks menu for Eurostar Premier, showcasing wines from small producers who work with great respect for their land and regions. Each wine is unique and offers a glimpse into France’s most innovative estates, each with its own story and flavours to reveal.”
Jérémy Chan: “I have really enjoyed this collaboration with Eurostar, which has allowed me to share many memories and personal ideas with passengers in the menus I have created. Working with Jessica and Honey, who have shared their knowledge of pastry and wine, has perfectly complemented the bold flavours, hyper-seasonal ingredients and spices of my cuisine. I hope that the journey we have shared together will be appreciated by those who take the Eurostar.”

We all share the same approach to the product, with respect for the earth and the producer. I have developed an accessible menu that offers original and tasty combinations. A culinary experience with respect for the environment
Eurostar has always placed sustainability at the heart of its commitment to becoming the backbone of sustainable travel in Europe. The Eurostar Premier Dining experience has been designed to reflect these values and be as environmentally friendly as possible. All menus offered are created using primarily fresh and seasonal ingredients from the countries we serve. The vineyards featured on the wine list have been carefully selected based on their commitment to sustainability.
In addition to the commitment of its chefs, Eurostar continues to reduce its carbon footprint on board its trains. For example, the company will remove an additional 2 million plastic bottles from on board 3 from 4 November.
The new classes of travel
This new restaurant offering is part of the launch of Eurostar’s new service levels: Eurostar Standard, Eurostar Plus and Eurostar Premier, which will replace the current travel classes on the Eurostar network from 4 November. More than 12,000 customers across five Eurostar countries have shared their needs and requirements, helping Eurostar to better meet their expectations. With the help of Eurostar’s 2,400 staff, these new services will become a reality, transforming Eurostar into a destination in its own right.
