With a distinguished career as a pâtisserie and chocolatier, Boulay brings an exceptional blend of creativity and expertise to The Peninsula Bangkok luxury dining experiences.
In celebration of Boulay’s arrival, The Peninsula Bangkok offers its guests an exclusive new Afternoon Tea set beginning 1st October. This refined experience showcases the chef’s modern approach to pastry, blending visual sophistication with exceptional flavour.
An interplay of flavour, colour, and texture
Chef Boulay’s Afternoon Tea features elements such as Thai basil and rose essence, adding a distinctive twist to traditional desserts. His use of diverse ingredients, including fruits, chocolates, and nuts, ensures a rich tapestry of flavours.
A key aspect of his philosophy is achieving the perfect balance of sweetness, ensuring each dessert is delightful without being overly sweet. The range of textures, from soft and crispy to spongy and creamy, further enhances the overall taste experience, making each dessert exceptionally enjoyable.

An inspiring career
Boulay’s journey began at the renowned Fauchon Paris, where he trained under some of the world’s most celebrated pastry chefs.
His career has since flourished with key roles at prestigious establishments, including Pierre Gagnaire’s Sketch in London, Le Meurice in Paris, Ritz-Carlton Tokyo, and Conrad Osaka. Most recently, he served as executive pastry chef at Four Seasons Hotel Seoul, where he led a diverse range of pastry operations.
Boulay also collaborated with culinary icons such as Alain Ducasse, Cedric Grolet, Yannick Alleno, and Yorick Tièche. His extensive international experience and exceptional skills position him to elevate The Peninsula Bangkok’s pastry offerings to new heights.
