Sands Resorts Macao has hosted an exclusive French dining experience at its Chiado restaurant, featuring cuisine by award-winning chef Hélène Darroze paired with wines from Château de Saint-Cernin, and introduced by renowned global winemaker and consultant Michel Rolland, as part of its ongoing Celebrity Chef Series.
Presented across a lunch and two dinners, the luxury menu was designed to highlight
Château de Saint-Cernin’s outstanding boutique wines, created by Mr Rolland and his
team on behalf of the château’s owners.
Attended by VIP guests, food and beverage industry leaders and the media, the dinner menu included carabineros prawns with clams; wild Scottish salmon with Oscietra caviar; and velouté of white coco beans with smoked eel and duck foie gras, all served with No 1 Saint-Cernin Limoux Blanc 2017 (white). This was followed by barbecued Japanese wagyu beef with Australian black truffle, accompanied by No 1 Saint-CerninBergerac Rouge 2016 (red) and dessert of raspberries, olive oil cream and sorrel sorbet, with Wessman One Champagne (rosé).

helm of Michelin-starred restaurants across Paris and London, but has also won the title
‘World’s Best Female Chef’ from the World’s 50 Best Restaurants. Visionary and trailblazer,
Michel Rolland is arguably the world’s leading oenologist and blender. With a track record of processing and blending to maximise the potential of wine on the global market, Mr Rolland works across joint venture partnerships in South Africa, Argentina, Spain, North America (mainly California) and Europe (mainly Bordeaux).
